I do understand the requirement for certificate with SAN/CN smtp.contoso.com

I don’t understand answer D: – ConnectorType is currently = default and the only other option for this parameter is “xpremises” I don’t think it has something to do with the secure mail communication.
Actually an Outlook Protection Rule (if there is IRM and RMS) could work:
“Administrators can create Outlook protection rules to automatically IRM-protect messages. Outlook protection rules are automatically deployed to Outlook clients, and IRM-protection is applied by Outlook when the user is composing a message. For more information, see Outlook protection rules.”
I would go with B & C
