Set-MailboxDatabase do nothing here.
First of all run Move-ActiveMailboxDatabase on EX01. Otherwise, how we know to remove DB01 from DAG on Ex02 or ExO1 ?
When you remove database copies, current server only holds the working database. For other servers, you have to create a copy later after the path has been moved. Therefore, Move-ActiveMailboxDatabase is not needed.
