You can only roll back to a previous version if a snapshot was taken in between the first author saving the document and it being overwritten – if shadow copies are only taken twice a day rolling it back to a point in time is not necessarily to the right version. Sharepoint foundation 2010 gives the versioning requirements of the question and is free (so cost is not an issue)
